Rebru Spirits is a business like no other located in Barrio Logan. Not only are they a distillery, but their property also boasts a unique speakeasy, both indoor and outdoor venues that are hosting a ton of fun events, a restaurant and even a butchery. There is a lot packed into this spot!
What makes this company so unique is that their entire line of spirits are re-crafted from some of the best beers, coffees and kombuchas around. Since those types of drinks have a much shorter life-span than spirits, most of those companies are often having to throw out a ton of their products. Not only that, but the companies are also having to pay to have it removed.
What Rebru Spirits does is take the unsold drinks and through a 16 plate distillation process, creates some of the smoothest liquors around. Even better, they are keeping it local as almost all of the companies they work with are in San Diego.
Rebru Spirits is an eco-conscious company on a mission to create sustainable products. By using recycled material and sourcing locally, they are doing far less harm to the environment.
The charcoal from the smoker at their restaurant is also used to filter, refine and flavor their spirits. They also use grains from Thorn Brewery to make the pizzas at their restaurant!
The property which the Rebru Spirits sits on has a unique history in itself. It once was a warehouse where they made boilers for ships, but what really makes it unique is that the boilers also doubled as a speakeasy during the prohibition era! This is the only speakeasy in San Diego that I know of that was also historically a *true* speakeasy. The Victorian home in Carlsbad where the Captain Charles Kenneth used to be was also an historic speakeasy, but sadly it went out of business in 2021.

We then got to tour their tasting room. My partner sampled all of their spirits and absolutely loved them. They even have absinthe!
